According to the World Health Organisation, low fruit and vegetable intake is among the top 10 selected risk factors for global mortality. Many of us already know this.
But have you ever wondered why? Why would every doctor in the world tell you to eat plenty of fruit and vegetables? They are healthy, yes, they are full of antioxidants, true, but what is it exactly about fruits and vegetables that make them so important for the body?
The answer lies in their colour. Think of kiwis, pineapples, oranges, grapes, apples, squashes, aubergines – like most other vegetables and fruits they are all very, very colourful. The reason? They are all rich in bioflavonoids.
Bioflavonoids (the name might be new to you, but it’s a name you should never forget) are pigment-rich phytochemicals that plants produce to protect themselves and coincidently are also responsible for the vibrant colours of fruit, vegetables and even flowers. But bioflavonoids are more than just colour pigment. These natural plant components also strengthen and protect living tissue.
